Simple Food

Check out this super simple recipe. I promise it is not hard to make. You just need some raw sunflower seeds, lemon, water and a few spices of your choice. Then you can eat it with your salad, steams, grain or even on toast.
Today is Day one of The Cleanse. I recommend you make it easy. The easier it is mentally the more successful you will be at sustaining it for ten days. Pick one thing to either eliminate from your lifestyle (sugar) or add to your diet (kale) for just 10 days. I know you can do it!
Sunflower Seed Cheese
V+PK- (increases Vata, pacifies Pitta and Kapha)
1 1/2 cups raw unsalted sunflower seeds (soaked in purified water 2-6 hours)
1 clove garlic (VP+K-)
1⁄2 tsp dried dill or a few sprigs of fresh dill 1 tsp cumin powder
2 lemons, juice of
1-2 cups water
1⁄2 tsp Celtic Sea Salt
optional based on dosha and preferences: 1⁄4 cup finely diced red onion (V+PK-)
1⁄4 cup finely diced cucumber &/or celery (V+KP-)
Soak the seeds for two hours minimum. Discard the soak water. Blend the seeds in a food processor. Add one cup of water, salt, lemon juice and garlic. Blend to a smooth consistency. Do not add too much water at first or else it may be too thin and you will need to add more seeds. Add liquid to desired consistency; you may want the consistency to be of a thick spread similar to humus or a thinner spread like a salad dressing.
Add seasonings; dill, tarragon, or cumin to taste preference.
Add finely chopped red onion and/or cucumber to give the pate more texture as desired. Serve on a bed of lettuce or in a romaine lettuce leaf wrap or eat with flax crackers or even on toast. Pate will keep in the refrigerator for 5 days  although it may turn a little gray. To prevent this, add more lemon when you are blending it. The lemon makes it very white.
